Steamed Christmas Pudding with Dried Fruit

Homemade Christmas pudding is a festive classic that is easy to prepare and loved by everyone. Steamed Christmas Pudding with Dried Fruit

Ingredients

150g + 3 tbsp butter, softened

2 large free-range eggs

130g brown sugar

50g plain flour

3 tbsp rum

100g sultanas

100g dried cranberries

120g almonds, chopped

100g currants

Zest of 1 lemon

30 ml vanilla extract

1 tsp cinnamon powder

100 g bread crumbs

Directions

Step 1

Add 150g softened butter and brown sugar to a medium bowl and beat with a spatula until light and creamy. Add the eggs one by one, and beat well after each one. Then add lemon zest, rum, cinnamon powder, vanilla extract, flour and breadcrumbs. Stir with a spatula until everything is combined. Finally, add sultanas, dried cranberries, chopped almonds and currants. Mix everything together. The mixture will be sticky and thick.

Grease 2L pudding mould, base 9 cm and height 12 cm. Pour the mixture and spread evenly.

Place a plate on the bottom of the pot so that the pudding mould does not come in direct contact with the pot so that it does not burn. Then put the pudding mould into the pot, and pour hot water into the pot, halfway up the pudding mould. Cover the pot with the lid. Steam the pudding on low heat for approximately 4 hours.  Check regularly to make sure the water level is still halfway up the pot and add more water if necessary.

Step 4

When the pudding is steamed through, remove the pudding mould and let it stand until the pudding cools down.  After that, invert the pudding onto a serving plate. 

Serving tips

  • Christmas Pudding should be reheated before serving. You can reheat it by steaming it for 45-60 minutes or reheating it in a microwave oven in a microwave-safe container to retain moisture.
  • Serve the Christmas pudding sprinkled with icing sugar, ice cream, whipped cream, cranberry sauce, melted chocolate, brandy sauce, or vanilla custard.
  • Serve with coffee or tea.

Tips

  • You can use any dried fruit or nuts.
  • The duration of steam cooking may vary depending on the size of the mould. The larger the mould, the longer it will take to cook.
  • Pudding can be stored in a cool, dry place for up to 10 days. However, if you want to keep it longer, you can store it in the fridge.
  • Wrap the plastic wrap tightly around the pudding to prevent it from drying out.
