Mulberry Crumble Cake

    • 250g mulberries

    Cake Ingredients

    • 120g self-raising flour
    • 80g brown sugar
    • 80ml skim milk
    • 60g butter melted
    • 1 free range egg
    • 1 teaspoon vanilla extract

      Crumble Ingredients

      • 120g flour
      • 80g brown sugar
      • 60g butter
      • 1 teaspoon cinnamon


        1. Preheat oven to 180C.
        2. Line an 8inch round pan with baking paper.
        3. Combine ingredients for the cake in a large bowl and beat until light and fluffy.
        4. Combine ingredients for the crumble in a separate bowl and mix it till the mixture resembles breadcrumbs.
        5. Spoon batter into the prepared tin.
        6. Top with mulberries (leave some mulberries for decoration).
        7. Top with crumble.
        8. Bake in preheated oven for approximately 35 minutes until golden and cooked through.
        9. Top with fresh mulberries.

        Serving Tip:

        Serve with whipped cream or vanilla ice cream.
