- 250g mulberries
Cake Ingredients
- 120g self-raising flour
- 80g brown sugar
- 80ml skim milk
- 60g butter melted
- 1 free range egg
- 1 teaspoon vanilla extract
Crumble Ingredients
Method:
- Preheat oven to 180C.
- Line an 8inch round pan with baking paper.
- Combine ingredients for the cake in a large bowl and beat until light and fluffy.
- Combine ingredients for the crumble in a separate bowl and mix it till the mixture resembles breadcrumbs.
- Spoon batter into the prepared tin.
- Top with mulberries (leave some mulberries for decoration).
- Top with crumble.
- Bake in preheated oven for approximately 35 minutes until golden and cooked through.
- Top with fresh mulberries.
Serving Tip:
Serve with whipped cream or vanilla ice cream.
