It is the festive season again and we are all excited as we prepare for celebration. Treats are, as always, a special part of the Christmas lunch, so today we offer you a recipe for a Juicy Christmas Cake with Walnuts. Enjoy.
Juicy Christmas Cake With Walnuts
Preparation: 20 minutes
Cooking: 30 minutes
Ingredients:
Biscuit:
A 200 ml cup is used as a measure.
- 3 large free-range eggs
- 1 cup raw sugar
- 1 cup milk
- 1 cup oil
- 2 cups plain flour
- 1 tsp baking powder
- 1 cup walnuts, ground
Filling:
- 500 ml milk
- 6 tbsp raw sugar
- 3 tbsp vanilla sugar
- 4 tbsp semolina
- 100 g cooking chocolate
- 150 g walnuts, ground
Topping:
- 300 ml milk
Chocolate glazing:
- 100 g cooking chocolate
- 100 ml whipping cream
Directions:
Step 1
Beat the eggs with sugar in a medium-sized bowl, with an electric mixer until thick and fluffy. Add the milk and oil and continue mixing for another minute. Add flour, baking powder, and walnuts and mix with a spatula until everything is combined.

Step 2
Preheat the oven to 180°C. Line a medium-sized baking tray with baking paper.

Step 3
Pour half the mixture into a lined baking tray and spread it evenly over the base. Bake for 10 minutes.

Step 4
Meanwhile, place the milk, sugar, and semolina in a medium-sized pan and mix well to combine. Cook the mixture over medium heat. When it boils, reduce the temperature and add chocolate. Cook over low heat until the chocolate melts. Remove from heat, add walnuts, and mix to combine.

Step 5
Take the baking tray out of the oven and spread the hot cream evenly over the biscuit. Spread the other half of the biscuit mixture evenly over the cream and return the tray to the oven. Bake for another 25 minutes.
Step 6
Take the tray out of the oven and evenly pour 300 millilitres of milk over the hot cake. Leave the cake to cool.
Step 7
Place the chocolate and the whipped cream into a small pan and heat over medium temperature, until the chocolate melts. Spread the chocolate mixture evenly over the cake and let it cool. Leave the cake overnight in the refrigerator. Cut the cake as desired.

Serving Suggestions:
