Penne with Vegetables and Baked Feta

Serves: 4

Preparation: 15 minutes

Cooking: 30 minutes

Ingredients:

  • 500 g penne pasta
  • 150 g Danish feta cheese
  • 250 g cherry tomatoes, coarsely chopped
  • 150 g corn kernels
  • 1 small capsicum, seeded, thinly sliced
  • 1 small onion, chopped
  • 1 zucchini, thinly sliced
  • 4 tbs extra virgin oil
  • ½ lemon juice
  • ½ cup Parmesan cheese, grated, to serve
  • ½ cup green stuffed olives, to serve

Directions:

Step 1

Preheat the oven to 200°C.  Line a large baking dish with baking paper.

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 3

Place the feta in the centre of the baking dish. Arrange the tomatoes, corn, capsicum, and onion around the feta, evenly, over the base of the baking dish. Drizzle half of the oil over the feta and vegetables. Bake for 30 minutes or until feta is lightly golden brown. Add the zucchini and bake until just tender.

Step 4

Meanwhile, cook the pasta in a pot of filtered salted water according to the package directions. Drain well, reserving ½ cup of the cooking liquid.

Step 5

Roughly crush the feta with a fork and transfer the mixture to a large bowl. Add the pasta, lemon juice, reserved cooking liquid, and the remaining oil to the feta mixture. Gently fold until combined.

Step 6

Divide the pasta mixture among the serving plates, and sprinkle with Parmesan and olives.
