Vegetarian Chilli Macaroni with Feta and Broccoli
Serves: 4
Preparation: 10 minutes
Cooking: 15 minutes
Ingredients:
- 500 g macaroni
- 500 g broccoli, roughly chopped
- 1 large carrot, thinly sliced
- 1 small onion, finely chopped
- 3 cloves garlic, finely chopped
- 3 small red chillies, seeded, finely chopped
- 150 g feta cheese
- 4 tbs extra virgin olive oil
- 1 tsp Himalayan salt
- 1 tsp homemade dry seasoning
- ½ tsp black pepper, freshly ground
- 50g parsley leaf, finely chopped, to serve
- 50 g parmesan, ground, to serve
Directions:
Step 1
Soak the vegetables in baking soda solution for 15 minutes, then rinse and dry.
Step 2
Cut the broccoli into small florets. Cut the carrot into thin slices, and chop garlic and onion. Clean the seeds from the red chillies and chop them finely.

Step 3
Cook pasta in a large pot of boiling salted water, according to package instructions. Add the broccoli during the last 4 minutes of cooking. Drain and reserve ½ cup of the cooking liquid. Return the pasta and broccoli to pot.

Step 4
Heat the oil in a large frying pan over medium heat. Add the onion, garlic and chilli and cook, stirring, for 2 minutes, or until fragrant. Remove the pan from the heat, add the pasta and broccoli and stir to combine. Reduce the heat and return the pan to the hot plate. Add fetta and reserved liquid to pasta mixture and stir to combine. Cook for another 30 seconds.

Step 5
Divide the pasta in serving bowls and sprinkle with parmesan and parsley.

- Garnish with fresh basil leaves instead of parsley
- Replace feta with halved bocconcini
- Keep leftover pasta in an airtight container on room temperature for up to 24 hours
