Christmas is a time when we all try not to think too much about what is good for our health, nor about counting calories, while we generally decide to enter the new year with more discipline and healthy options. Therefore, we bring you a recipe for Christmas Coconut Biscuits that will brighten up your festive season. Enjoy.
Christmas Coconut Biscuits
Preparation: 30 minutes
Cooking: 10 minutes
Ingredients:
- 250 g butter, room temperature
- 100 g sugar
- 300 g plain flour
- 200 g coconut, desiccated
- 2 tbs vanilla powder
- Pinch of Himalayan salt
- ½ tsp baking flour
- Icing sugar for coating
Directions:
Step 1
Mix the butter with sugar until it becomes soft and fluffy. Add the coconut, salt and vanilla powder and mix well to combine.

Step 2
Gradually add the flour with baking powder to the butter mixture and combine the ingredients by hand. At first, the mixture will crumble, then it will become compact. Shape the dough.

Step 3
Preheat the oven to 180°C. Line a baking sheet with baking paper.

Step 4
Roll out the dough to a thickness of 1 centimetre. Cut the developed dough with cutters in the shape of a Christmas tree and reindeer. Place the biscuits on a baking sheet and bake them for 10 minutes. Remove from the oven and let cool for 10 minutes. Coat warm biscuits with powdered sugar.

Tips:
- Bake the Christmas coconut biscuits at least 3 days before so that they soften;
- Store the biscuits in an airtight container at room temperature for up to 5 days;
- Store the biscuits in an airtight container in the refrigerator for up to 10 days.
