Egg and Zucchini Spaghetti

Egg and Zucchini Spaghetti

Serves: 4

Preparation: 10 minutes

Cooking: 15 minutes

Ingredients:

  • 500 g spaghetti
  • 2 medium zucchinis, cut into long matchsticks
  • 3 garlic cloves, finely chopped
  • ½ cup finely chopped spring onion
  • 300 ml cooking cream
  • 50 g parmesan cheese, grated
  • 4 tbs extra virgin olive oil
  • 4 free range eggs, fried
  • 1 tsp Himalayan salt
  • ½ tsp ground black pepper
  • Parsley leaf, finely chopped

Directions:

Step 1

Cook the spaghetti in a saucepan of boiling water following packet instructions. Drain well and return to a pan.

Step 2

Meanwhile, cut the zucchini into long matchsticks and add to the pasta. Stir well to combine.

Step 3

Heat 2 tablespoons of olive oil in a frying pan over medium heat. Add the garlic and spring onion and cook, stirring constantly, for 5 minutes, or until softened and fragrant. Add the cream and bring to a simmer. Cook for another 1-2 minutes, until the cream thickens. Remove from heat and mix in Parmesan cheese. Add salt and pepper and stir well. Pour the mixture over the pasta and zucchini mixture and stir well to combine.

Step 4

Heat 2 tablespoons of olive oil in a frying pan over medium heat and fry the eggs until cooked to your liking.

Step 5

Divide the pasta into serving bowls and top with fried eggs and parsley. Serve immediately.

Serving suggestions:

  • Replace the parsley leaf with fresh chopped spring onion to serve;
  • Replace the eggs with finely chopped fried bacon rashers.

Tips:

  • Store leftover pasta in an airtight contains in the refrigerator for up to 3 days;
  • Reheat leftover pasta adding a little almon milk.
