Stuffed peppers are a very popular Southern European dish. The filling can vary according to preferences; they can be cooked or baked, but they all contain rice and peppers. Today, we bring you a simple recipe for a vegetarian version of stuffed peppers that you can try, and we are sure you will love it. Enjoy!
Vegetarian Stuffed Peppers
Serves: 6
Preparation: 30 minutes
Cooking time: 40 minutes
Ingredients:
- 12 peppers
- 150 g white rice
- 2 large carrots, grated
- 2 large potatoes, grated
- 1 medium onion, finely chopped
- 1 clove garlic, finely chopped
- 1 large tomato, finely chopped
- 3 tbs extra virgin olive oil
- 1 cup filtered water
- 1 tsp Himalayan salt
- 1 tsp homemade dry seasoning
- ½ tsp ground black pepper
- 1 tsp ground paprika
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Cut off the tops of the peppers and remove the seeds.

Step 3
Peel and grate the carrots and potatoes and set aside. Finely chop the onion, tomato and garlic.

Step 4
Heat the olive oil in a medium-sized saucepan over medium heat. Add the onion and cook for 2 minutes, or until it becomes fragrant and translucent. Add the garlic and cook for another minute.

Step 5
Add the tomato, carrot and potato and stir to combine. Add the rice and water and mix to combine. Season with salt, pepper, dry seasoning and paprika. Cover and cook over low heat until thickened.

Step 6
Preheat oven to180°C. Fill each pepper with the stuffing and place in a heatproof baking dish. Cover with a lid and bake for 40 minutes, or until the peppers are soft.

Serving suggestions:
- Serve with mashed potatoes and steamed vegetables.
- Serve with grilled Turkish bread and Greek yoghurt traditional style.

- Store leftover stuffed peppers in an airtight container in the refrigerator for up to 5 days.
