Valentine’s Day Cupcakes With Peanut Butter
Ingredients
- 250 g flour
- 200 g raw sugar
- 2 free-range eggs
- 80 g butter
- 150 g peanut butter
- 250 ml full cream milk
- 2 tsp baking powder
- Pinch of Himalayan salt
- 2 tsp Vanilla Extract
Icing
- 125 g butter
- 1 cup icing sugar
- 1 tsp vanilla essence
- 1 tbs milk
Method
Step 1
Preheat a fan-assisted oven to 180°c. Line the muffin pan with baking cups.
Step 2
In a large mixing bowl, beat butter, sugar, and peanut butter with an electric mixer until light and smooth. Add eggs and vanilla extract and mix for another 2 minutes.

Step 3
Add flour, baking powder, salt, and milk to the butter mixture and mix well until combined.
Step 4
Evenly distribute the cupcake batter into prepared baking cups. Bake the cupcakes for 25 – 30 minutes or until a toothpick inserted into the center comes out clean.

Step 5
Place the cupcakes on a wire rack to cool.
Step 6
Icing:
Place the butter, icing sugar, and vanilla in a small bowl and mix to combine. Add milk as needed to get a smooth spreadable consistency.

Step 7
Coat each cupcake with the icing and decorate with Valentine’s Day toppers or sprinkles.

Tips
- Serve with black coffee or red wine;
- Refrigerate cupcakes in an airtight container for up to a week;
- You can freeze before adding frosting for up to 4 months.
