Overnight oats with pumpkin seeds and yoghurt are the best way to start your day – try it!
A bowl of oats is a good way to start the day. Whatever you add to it is an added benefit, but do not forget to add pumpkin seeds, because they are a real treasure. They are also inexpensive and a great healthy snack option, and they provide your body with valuable antioxidants, vitamins and minerals that will improve your overall health.
Pumpkin seeds have been used in various forms for medicinal purposes for hundreds of years. They are rich in nutrients, so regular consumption provides multiple health benefits. Pumpkin seeds contain high amounts of magnesium, iron, potassium, zinc, calcium, phosphorus, manganese, copper and vitamin K. They are also rich in antioxidants, and contain omega-3 and omega-6 fatty acids, vitamin B2 and folate. Pumpkin seeds have been shown to improve heart health, blood sugar levels, prostate health, fertility and sleep quality. They are also known to protect against some types of cancer. Overnight Oates with Pumpkin Seeds and Yoghurt:
Serves: 2
Preparation: 15 minutes + overnight soak
Ingredients:
- 300 g organic rolled oats
- 275 ml organic almond milk
- 125 ml filtered water
- 200 g Greek yoghurt
- 2 large apples grated
- 250 g strawberries
- 100 g blueberries & 100 g pumpkin seeds to serve
Preparation:
Step 1
Soak the fruit in a solution of baking soda for 15 minutes, rinse and dry.
Step 2
Put strawberries in a bowl and mash with a fork. Add a dash of water if necessary.
Step 3
Peel the apples and finely grate them.
Step 4
In a large bowl combine the rolled oats, almond milk, mashed strawberries, grated apple and water and mix well.
Step 5
Stir in the Greek yoghurt, cover and leave overnight to soak.
Step 6
Divide the oat mixture into serving bowls, then top with blueberries and chopped pumpkin seeds.
Tip
- Replace almond milk with the milk of your choice.
- Instead of strawberries, add fruit as desired.
- Serve topped with jelly instead of blueberries.
