Healthy Mother’s Day Cheesecake

Healthy Mother’s Day Cheesecake

Preparation: 20 minutes

Cooking: 20 minutes

Ingredients:

  • 500 g Cottage cheese
  • 4 tbs oat bran
  • 2 tbs cocoa powder, sifted
  • 2 free-range eggs
  • 1 free-range egg white
  • 2 tbsp raw sugar
  • 5 g butter, room temperature

Directions:

Step 1

Preheat the oven to 180°C.  Line a 20 cm round baking tray with baking paper.

Step 2

Add 200 grams of Cottage cheese to a mixing bowl and mash it with a fork. Then, add the oat bran and mix well to combine. Add the cocoa powder to the mixture and mash it all together with a fork to form crumbs.

Step 3

Grease the lined baking tray with the butter. Pour half of the crumbs into the baking tray and spread evenly over the base. Press it down with a fork.

Step 4

Add 300 grams of Cottage cheese to a mixing bowl. Add sugar, eggs, and egg white and mix with an electric mixer until combined.

Step 5

Pour the cheese mixture into the baking tray and spread evenly over the bran mixture. Sprinkle the remaining bran mixture over the cheese mixture. Bake for 45 minutes. Remove the cake from the oven and let it cool completely.

Step 6

Transfer the cake to a plate and remove the baking paper. Decorate with berries. Cut into slices and serve.
