When it comes to desserts, many will hesitate when choosing. We all know how beautiful but unhealthy they can be. Sometimes we don’t think but enjoy them, however, sometimes we feel guilty while eating them, or after eating them. So, how would you feel if you could eat a guilt-free dessert? Today, we have a “Guilt Free Dessert” recipe for apricot and peanut balls. Enjoy!

Apricot and Peanut Balls
Ingredients:
- 200 g dried apricots
- 160 g of raw, unsalted peanuts
Directions:
Step 1
Pour boiling water over the apricots and leave for 15 minutes.
Step 2
Put the peanuts in a pan and roast over medium heat for 15 minutes, or until fragrant and golden brown, stirring constantly. Remove the pan from the heat and let it cool completely.

Step 3
Drain the apricots and dry them with a paper towel. Put the apricots on a chopping board and chop them finely, then transfer them to a food processor and process until you get a smooth consistency. Transfer the apricots to a medium-size mixing bowl.

Step 4
Put the peanuts in a food processor and process them finely. Pour them over the apricots and mix well to combine.

Step 5
Take 1 tablespoon of the mixture, press and roll into a walnut-size ball. Repeat until finished. Place the balls in paper cups.

*Peanuts are full of protein, fibre, polyphenols, antioxidants, minerals and vitamins. The study showed that they are rich in compounds like resveratrol, phenolic acids, flavonoids and phytosterols that block the absorption of cholesterol from the diet. Since they contain over 30 vitamins and minerals, they have recently achieved superfood status.
**Dried apricots are rich in vitamin A, iron, calcium, magnesium, and potassium, and do not contain fat. They contain antioxidants and fibre that reduce the risk of heart disease, diabetes and some types of cancer. Research has shown that plant compounds in apricots help prevent osteoarthritis, as well as inflammatory forms of arthritis.
