Summer is the time when we all crave ice cream, a cold drink or a dessert to cool off. Before you dig into a bowl of ice cream, drink a sugary drink or unhealthy muse, why not try these simple, refreshing, healthy summer desserts that will provide you a guilt-free pleasure, long-lasting satiety and freshness?
1. Sweet Cherry Smoothie
Serves: 2
Preparation: 10 minutes
Ingredients:
- 1 cup Greek yoghurt
- 1 cup sweet cherries, pitted
- 1 tsp row honey
- 1 pinch Himalayan salt
- ½ cup filtered water
Directions:
Step 1
Place yoghurt, cherries, honey and salt in a blender and add half of the water. Leave 6 cherries for decoration. Process on medium speed, while adding the remaining water to get desired consistency.
Step 2
Divide the smoothie into two serving glasses and garnish with the remaining cherries. Cool for half an hour before serving.
Tips:
- Substitute Greek yoghurt with coconut, almond, cashew or soy yoghurt;
- Replace honey with maple syrup;
- Store leftovers in an air-tight container in the refrigerator for up to 3 days;
- Add more water or honey to reach the desired consistency or sweetness.
2. Creamy Cinnamon-Chia Pudding
Serves: 2
Preparation: 5 minutes
Ingredients:
- 2 cups unsweetened almond milk
- 5 tbs chia seeds
- 3 tbs row honey
- 1 tsp Ceylon cinnamon
- 2 tsp vanilla extract
- 1 pinch Himalayan salt
Topping ingredients:
- Coconut, cacao nibs, pumpkin seeds;
- Dried dates, currants, bananas or sultanas;
- Coco powder or grated dark chocolate;
- Walnuts and sesame seeds.
Directions:
Step 1:
Add all ingredients to a medium-sized bowl and mix well, by whisking until everything is combined, dissolved and smooth.
Step 2
Place in the refrigerator for 4 hours, stir after one hour and then again after two hours.
Step 3
Spoon into serving bowls and top with ingredients of your choice.
