Traditional Christmas Fruit Cake

A traditional Christmas fruit cake is packed with nuts, dense, plump fruits, spices and a little bit of cherry. Although it is known as “boiled”, it does not mean that the cake itself is cooked, but the fruit mix is cooked with water and alcohol so that the fruit releases its aromas and becomes plump. Cooking: 3 hours

Ingredients:

  • 1 kg mixed dried fruit
  • 250 g raw sugar
  • 250 g softened butter
  • 250 ml sherry
  • 1 orange, juiced
  • 2 tbs finely grated orange rind
  • 4 free-range eggs, lightly beaten
  • 300 g plain flout
  • 1 tbs baking powder
  • 100 g macadamias
  • 100 g blanched almonds
  • 2 tsp ground cinnamon
  • A pinch of Himalayan salt

Directions:

Step 1

Line the base and sides of a deep round cake pan with a diameter of 22 cm, with baking paper, extending the paper 5 cm above the side.

Step 2

Combine fruit, sugar, butter, half the sherry and orange juice in a large saucepan. Stir over medium heat until the butter melts and the sugar dissolves. Bring to a boil, then remove from heat. Transfer the mixture to a large bowl and let it cool.

Meanwhile, preheat oven to 150°C.

Step 4

Add orange rind and eggs, one at a time, into the fruit mixture and mix well to combine. Stir in the sifted dry ingredients and mix well to combine. Spread the mixture into the pan and top with nuts.

Bake the cake for about 3 hours or until a skewer inserted into the middle comes out clean.

Step 6

Take the cake out of the oven and brush it with extra sherry. Wrap the hot cake in a clean towel and cool it in the pan overnight.
