Healthy Banana Bread… everyone’s favorite brunch recipe – try it today!
In addition to being a good option for weight loss, bananas are delicious, healthy, and suitable for making cakes and desserts. They are rich in potassium which maintains good cardiovascular health and muscle recovery; They are rich in fiber that improves digestion and blood sugar control; And they are a good ingredient for healthy options in a number of sweets that we can eat without feeling bad about it.
For that reason, today we bring you a simple recipe for the famous banana bread, which we have enriched with some more healthy ingredients for you to enjoy.
Ingredients:
- 3 large bananas, meshed
- 5 tbs of melted organic coconut oil
- 3 tbs of melted row honey
- 1 cup Greek yoghurt
- 2 free range eggs
- ½ cup lemon juice, freshly squeezed
- ½ tsp Himalayan salt
- 1 tsp baking soda
- 1 tsp Ceylon cinnamon
- 1 cup walnuts, chopped
- 50 g dark chocolate, chopped
- 250 g self-rising flour
Directions:
Step 1
Peel and chop the bananas and mash them finely with a fork in a medium-sized bowl. Add the melted honey and coconut oil and mix well to combine.
Step 2
Add eggs, lemon juice, and yogurt to the mixture and whisk everything together to get a smooth consistency.
Step 3
Add salt, baking soda, and cinnamon to the bowl and mix well to combine. Mix in the walnuts and chocolate and start adding the flour gradually, stirring constantly, to break up the lumps.
Step 4
Preheat the oven to 180°C. Line a medium loaf pan with baking paper, pour the cake mixture in, and bake for 45 minutes, until a toothpick inserted into the center of the loaf comes out clean. Check on the banana bread after 30 minutes and lightly cover it with baking paper to prevent the top from browning excessively. Leave the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Cut the loaf into slices.
Serving suggestion:
- Serve with fresh berries
- Serve with homemade ice cream
Tips:
- Add chopped dried apricots and dried cranberries to improve the texture;
- Replace honey with maple syrup.
