The holidays are a time when we often don’t think much about our health, but we usually decide to start the new year with a stricter diet. To help get into the holiday spirit, we bring you a recipe for a perfectly delicious Christmas Cranberry and Orange Puddings. Merry Christmas!
Christmas Cranberry and Orange Puddings
Serves: 6
Preparation: 15 minutes
Cooking: 30 minutes, plus cooling
Ingredients:
- 185 g plain flour
- 150 g raw sugar, plus extra for sprinkling
- 2 large free-range eggs, at room temperature
- 1 large free-range egg white
- 30 ml milk
- 90 ml vegetable oil
- 1 tbsp vanilla sugar
- 1 orange zest, finely grated
- ½ cup dried cranberries
- ½ tsp baking soda
Directions:
Step 1
Preheat the oven to 180°C. Grease 6 pudding moulds with oil and sprinkle with sugar, tapping out any excess. Place the moulds in a deep baking pan.
Step 2
Combine oil, sugar, and orange zest in a mixing bowl and whisk until smooth. Whisk in the eggs and egg whites, then add the milk and vanilla.

Step 3
Add the flour and baking soda to the mixture and mix until completely combined and smooth. Stir in the cranberries and divide the mixture among the moulds.

Step 4
Pour boiling water into the baking pan until it comes halfway up the pudding moulds. Cover the pan with aluminium foil and bake for about 30 minutes or until the tops of the puddings spring back when gently pressed.
Step 5
Transfer the moulds to a wire rack to cool for 20 minutes before serving.
Serving Suggestion:
- To serve, remove the puddings from the pan and invert them onto individual serving plates
- Serve with vanilla yogurt
- Serve with vanilla ice cream
Tips:
Pre-bake the puddings, cool, and refrigerate in the moulds for up to 3 days. Before serving, let them sit at room temperature for 1 hour, then reheat them in a covered water bath for 20 minutes at 150°C.
