Easy and Healthy Potato and Egg Salad

There are numerous options and variations when it comes to salad. A salad can be a delicious appetizer, a refreshing side dish or a nutritious and delicious main dish. Healthy Potato and Egg Salad

Serves: 4

Preparation: 10 min + cooling time

Cooking: 45 minutes

Ingredients:

  • 1 kg white baby potatoes, halved
  • 4 free range eggs
  • 4 spring onions thinly sliced
  • 3 cloves garlic, finely chopped
  • 4 pickled cucumbers thinly sliced
  • ½ cup staffed green olives
  • ½ cup walnuts, chopped
  • 2 tsp Himalayan salt
  • ½ tsp freshly ground black pepper
  • 2 + 2 tbs extra virgin olive oil
  • 2 tbs lemon juice

Directions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 2

Heat the oven to 200°C. Place the potatoes in a roasting pan and drizzle with 2 tablespoons of olive oil. Season and toss to combine. Roast for 45 minutes or until potatoes are golden brown and cooked through.

Step 3

Meanwhile, cook the eggs in a small pot of water over medium heat for 7 minutes, then drain and place in cold water to stop the cooking process. Peel the cooled eggs and cut them in half.

Step 4

Finely chop the garlic, and thinly slice the cucumbers and spring onions and set aside.

Step 5

Place the potatoes in a serving bowl. Add the garlic, walnuts, onions and cucumbers and stir to combine.

Step 6

Mix the lemon juice with olive oil, salt and pepper, pour over the potato mixture and stir to combine. Add the egg halves on top of the mixture and serve.

Serving suggestion:

  • Serve with grilled halloumi cheese
  • Serve with fried tofu

Tips:

  • Replace extra virgin olive oil with organic extra virgin coconut oil
  • Replace green stuffed olives with chopped capsicum
  • Roast 2 tablespoons of sesame seeds and add to the dressing to improve the taste
  • Replace the walnuts with toasted almond flakes
