Easter is the time of celebration. Often, we avoid making desserts because they’re unhealthy. Here are 3 healthy Easter desserts you can make for your family and friends.

1. Raspberry Easter Cake
Ingredients:
- 1kg raspberries
- 200g plain flour
- 150g brown sugar
- 150ml milk
- 100g unsalted butter
- 2 free range eggs
- 1 ½ teaspoons of vanilla or rum extract
- 2 teaspoons baking powder

Method:
- Preheat oven to 180 °C.
- Grease a 30cm cake pan.
- Beat the butter, eggs, and sugar together in a mixing bowl with an electric mixer until mixture is pale and fluffy.
- Add milk to the mixing bowl and mix till combined.
- Add vanilla or rum extract to the mixing bowl and mix until combined.
- Add the flour and baking powder in a mixing bowl and stir till flour is incorporated.
- Pour the batter into the pan and spread until you have an even layer.
- Place the raspberries on top.
- Bake for 60 minutes until golden (test the cake with a wooden skewer to see if the center is fully baked)
2. Espresso Protein Balls – Healthy Easter Treat
Ingredients:
- 15 pitted dates
- 50g almonds
- 50g walnuts
- 220g roasted buckwheat
- 125ml espresso coffee
- 60ml coconut oil
- 3 tablespoons vanilla or rum extract
- 250g peanut butter
- 60g cacao

Method:
- Combine dates, espresso coffee, coconut oil and vanilla/ rum extract in a blender and puree it until smooth.
- Add walnuts, almonds, roasted buckwheat, peanut butter, and cacao and bland until sticky and combined.
- Compress and roll mixture into walnut-sized balls.
- Chill for 30 minutes to firm up.

3. Carrot Cake Cupcakes – Fun Easter Treat
Ingredients:
- 2 carrots, shredded
- 160g flour
- 50g walnuts
- 4 free range eggs
- 125g Greek yogurt
- 170g maple syrup
- 70ml skim milk
- 2 teaspoons vanilla extract
- 1 ½ teaspoons baking powder
- 2 teaspoons ground cinnamon
Frosting:
- 250g light cream cheese
- 100g maple syrup
- 2 teaspoons vanilla extract

Method:
- Preheat oven to 180°C; In a mixing bowl, whisk the eggs until light.
- Add in the Greek yogurt, milk, vanilla extract, and maple syrup and beat the mixture again until smooth.
- Add the shredded carrots, walnut, flour, cinnamon, and baking powder.
- Using a spatula combine all ingredients.
- Portion the batter into a greased 12-cup muffin/ cupcake tray.
- Bake for 20-25 minutes, until the muffins have risen and set.
- For the frosting, beat the cream cheese in a mixing bowl until smooth.
- Add in vanilla extract and the maple syrup and beat until the mixture is combined.
- Once the cupcakes have cooled, use a small spoon to spoon a bit of the frosting on top of each cupcake.
- Chill for 30 minutes.
