3 Healthy Easter Desserts

Easter is the time of celebration. Often, we avoid making desserts because they’re unhealthy. Here are 3 healthy Easter desserts you can make for your family and friends.

1. Raspberry Easter Cake

Ingredients:

  • 1kg raspberries 
  • 200g plain flour
  • 150g brown sugar
  • 150ml milk
  • 100g unsalted butter
  • 2 free range eggs
  • 1 ½ teaspoons of vanilla or rum extract
  • 2 teaspoons baking powder

Method:

  1. Preheat oven to 180 °C.
  2. Grease a 30cm cake pan.
  3. Beat the butter, eggs, and sugar together in a mixing bowl with an electric mixer until mixture is pale and fluffy. 
  4. Add milk to the mixing bowl and mix till combined.
  5. Add vanilla or rum extract to the mixing bowl and mix until combined. 
  6. Add the flour and baking powder in a mixing bowl and stir till flour is incorporated.  
  7. Pour the batter into the pan and spread until you have an even layer. 
  8. Place the raspberries on top.
  9. Bake for 60 minutes until golden (test the cake with a wooden skewer to see if the center is fully baked)

2. Espresso Protein Balls – Healthy Easter Treat

Ingredients:

  • 15 pitted dates
  • 50g almonds
  • 50g walnuts
  • 220g roasted buckwheat
  • 125ml espresso coffee
  • 60ml coconut oil
  • 3 tablespoons vanilla or rum extract
  • 250g peanut butter
  • 60g cacao

Method:

  1. Combine dates, espresso coffee, coconut oil and vanilla/ rum extract in a blender and puree it until smooth.
  2. Add walnuts, almonds, roasted buckwheat, peanut butter, and cacao and bland until sticky and combined.
  3. Compress and roll mixture into walnut-sized balls.
  4. Chill for 30 minutes to firm up.

3. Carrot Cake Cupcakes – Fun Easter Treat

Ingredients:

  • 2 carrots, shredded
  • 160g flour
  • 50g walnuts
  • 4 free range eggs
  • 125g Greek yogurt
  • 170g maple syrup
  • 70ml skim milk
  • 2 teaspoons vanilla extract
  • 1 ½ teaspoons baking powder
  • 2 teaspoons ground cinnamon

Frosting:

  • 250g light cream cheese
  • 100g maple syrup
  • 2 teaspoons vanilla extract

Method:

  1. Preheat oven to 180°C; In a mixing bowl, whisk the eggs until light.
  2. Add in the Greek yogurt, milk, vanilla extract, and maple syrup and beat the mixture again until smooth.
  3. Add the shredded carrots, walnut, flour, cinnamon, and baking powder.
  4. Using a spatula combine all ingredients.
  5. Portion the batter into a greased 12-cup muffin/ cupcake tray.
  6. Bake for 20-25 minutes, until the muffins have risen and set.
  7. For the frosting, beat the cream cheese in a mixing bowl until smooth.
  8. Add in vanilla extract and the maple syrup and beat until the mixture is combined.
  9. Once the cupcakes have cooled, use a small spoon to spoon a bit of the frosting on top of each cupcake.
  10. Chill for 30 minutes.
