Quick and Healthy Lentil Soup

Ingredients for lentils soup:

  • 500 g red lentils
  • 1 onion
  • 2 carrots
  • 3 cloves garlic
  • 1 red capsicum
  • 2 tbs extra virgin olive oil
  • 1 tsp homemade dry seasoning
  • 1 tsp Himalayan salt
  • ½ tsp chili flakes
  • ½ tsp black pepper
  • Fresh parsley leaf chopped

Method:

Step 1

Peel the onion, carrot, garlic, and capsicum and soak them in a solution of baking soda for 15 minutes. Soak the lentils separately in a solution of baking soda. After 15 minutes rinse and finely chop the vegetables.

Step 2

Put oil in a medium-sized pot, add chopped vegetables and cook over medium heat. Rinse the lentils and add them to the mixture. Add filtered water, salt, pepper, chili flakes, and dry seasoning and stir to combine. Cover with a lid and bring to a boil over medium heat. Reduce the heat and simmer for 15 minutes, or until cooked.

Step 3

Divide the soup into serving bowls, and garnish with a chopped parsley leaf.

Serve hot with the slices of warm Turkish bread.
