Healthy Carrot Buns

Do you need a recipe for a quick snack? Try these healthy carrot buns – they’re delicious!

Cooking time: 12-15 minutes

Ingredients for healthy carrot buns:

  • 150 gr carrots processed
  • 300 gr flour
  • 1 dry yeast
  • 110 ml filtered water
  • ½ teaspoon Himalayan salt
  • 1 tablespoon brown sugar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dry seasoning
  • Sesame seeds*

Preparation:

Step 1

Wash carrots in the bicarb soda solution, chop them into small pieces, and put them in a blender. Add water and blend until smooth.

Step 2

Transfer carrot purée into a bowl, add sugar, salt, olive oil, seasoning, and dry yeast, and mix well to combine. Add flour and knead until smooth. Cover and rise for about 1.5 hours, or until doubled in size.

Step 3

Lightly sprinkle the kneading board with flour, transfer the dough, and press slightly to deflate the air bubbles and shape them. Cut the dough and divide it into 12 pieces and shape it into balls. Cover and leave to rest for 30 minutes.

Step 4

Line a medium-sized baking tray with baking paper. Take a piece of dough and roll it out with a rolling pin and place it on a baking sheet. Repeat until all parts are done. Spray slightly with water and sprinkle with sesame seeds.

Step 5

Bake for 12-15 minutes at 180°C. Place on rack to cool for 5 minutes.

Serve with natural-style Greek yogurt and fresh berries.

*Optionally you can use poppy seeds or chia seeds.

**For a less healthy version, buns can be fried in a frying pan coated with olive oil, for 3 minutes on each side, or until golden brown.
