When someone mentions cinnamon, most people think of apple pie, cinnamon swirl or cinnamon rice. But did you know that cinnamon also has many health benefits? Cinnamon is a popular spice obtained from the bark of the Cinnamomum tree. It is very aromatic, so it is mostly used in bakery goods. Cinnamon is rich in carbohydrates, proteins and fibre. It contains a significant amount of minerals such as manganese, calcium, iron, copper and zinc. Cinnamon also contains vitamins C, K, B2 (pyridoxine) and B6 (riboflavin). It is rich in antioxidants. Cinnamon has a very high content of the compound cinnamaldehyde, which is responsible for most of cinnamon’s powerful healing effects. Today, we bring you a simple recipe for a healthy cinnamon tea cake that you can try and enjoy.

Cinnamon Tea Cake
Serves: 8
Preparation: 15 minutes
Cooking time: 20 minutes
Ingredients:
- 1 cup self-rising flour
- 1 free-range egg
- 100 ml almond milk
- 70 g butter (room temperature)
- ½ cup + 3 tbs caster sugar
- 2 + 1tsp Ceylon cinnamon
- 2+1 tbs vanilla powder
Directions:
Step 1
Preheat the oven to 180°C. Line a small baking dish with a diameter of 20 cm with baking paper.

Step 2
Add butter, ½ cup of caster sugar, egg, 2 teaspoons of cinnamon, and 2 tablespoons of vanilla and mix well, until smooth and creamy. Stir in the sifted flour and milk and beat lightly until the mixture becomes smooth.

Step 3
Spread the mixture evenly in the baking dish and bake for 20 minutes, or until the toothpick inserted in the centre of the cake comes out clean.

Step 4
Turn the cake onto the wire rack. Combine 3 tablespoons of caster sugar with one teaspoon of cinnamon and one tablespoon of vanilla powder and stir to combine. Sprinkle the mixture over the cake.
Tips:
- Serve this light, fluffy and sweet cinnamon tea cake with a cup of coffee or tea as an afternoon tea.
- Serve warm with butter.
- Store any leftovers in an airtight container at room temperature for up to 5 days.
- Freeze any leftovers in an airtight container for up to 2 months.

Note:
There are two main types of cinnamon:
- Ceylon cinnamon – This type of cinnamon is known as “true” cinnamon.
- Cassia cinnamon – Also known as Chinese cinnamon, is the most common variety today.
Ceylon cinnamon is healthy and safe to use in recommended doses. Cassia cinnamon contains a higher amount of coumarin, which can cause liver damage if taken in higher doses over a longer period of time.
