Healthy Raspberry Muffins

Serves: 12

Preparation: 10 minutes

Cooking time: 35 minutes

Ingredients:

  • 350 g plain flour
  • 60 g butter
  • 2 free-range eggs
  • 200 g frozen raspberries
  • 150 g raw sugar
  • 350 ml organic almond milk
  • 1 tbs baking powder
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • Pinch of Himalayan salt
  • ½ cup walnuts, roughly chopped

Directions:

Step 1

Preheat oven to 180 °C.  Line a 12-hole muffin pan with paper cups.

Step 2

Sift the flour, baking powder and baking soda into a large bowl. Mix in the sugar, milk, vanilla extract, butter and eggs until combined. Add the raspberries and mix well to combine.

Divide the mixture into paper cups and sprinkle with walnuts.

Bake the muffins for about 20 minutes, then remove them from the pan and place them onto a wire rack to cool.

Serving suggestions:

  • Serve with homemade ice cream or whipped cream
  • Serve as morning/afternoon tea or at Sunday brunch

  • Sprinkle the muffins with icing sugar or cocoa powder
  • Replace raspberries with blueberries, or berries of your choice
