Ingredients:
- 350 g plain flour
- 60 g butter
- 2 free-range eggs
- 200 g frozen raspberries
- 150 g raw sugar
- 350 ml organic almond milk
- 1 tbs baking powder
- ½ tsp baking soda
- 1 tsp vanilla extract
- Pinch of Himalayan salt
- ½ cup walnuts, roughly chopped
Directions:
Step 1
Preheat oven to 180 °C. Line a 12-hole muffin pan with paper cups.

Step 2
Sift the flour, baking powder and baking soda into a large bowl. Mix in the sugar, milk, vanilla extract, butter and eggs until combined. Add the raspberries and mix well to combine.

Step 3
Divide the mixture into paper cups and sprinkle with walnuts.

Step 4
Bake the muffins for about 20 minutes, then remove them from the pan and place them onto a wire rack to cool.
