When it comes to weekday dinners, we’re all looking for easy options that can shorten the preparation time. Today we bring you a recipe for vegetarian pumpkin, spinach and ricotta cannelloni to try and enjoy.

Vegetarian Pumpkin, Spinach and Ricotta Cannelloni
Servings: 6
Preparation: 20 minutes
Cooking: 60 minutes
Ingredients:
- 300 ml of pumpkin soup, precooked, seasoned
- 300 g frozen chopped spinach, thawed
- 400 g ricotta cheese
- 18 cannelloni
- 125 g cherry tomatoes, halved
- 1/3 cup basil leaves, finely chopped + extra to serve
- 2/3 cup parmesan, grated
- 1 cup mozzarella, grated
- 1 tsp Himalayan salt
- ½ tsp homemade dry seasoning
- ½ tsp black pepper, freshly ground
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Place the spinach in a sieve set over a bowl. Press the spinach with the back of a spoon to drain the excess liquid.

Step 3
Place the ricotta, spinach, chopped basil and half the parmesan in a large bowl. Season with salt, pepper and dry seasoning and mix well to combine.

Step 4
Preheat the oven to 200°C. Lightly grease a medium-sized baking dish. Spread half of the pumpkin soup in the baking dish, over the base.

Step 5
Fill the cannelloni with the spinach and ricotta mixture and arrange over the pumpkin soup layer. Spread the remaining pumpkin soup evenly over the cannelloni, season as desired and cover with foil. Bake for 50 minutes.

Step 6
Remove the foil from the baking dish and sprinkle the cannelloni with the mozzarella and remaining parmesan cheese. Bake uncovered for 10 minutes, or until cheese is golden and melted. Remove from the oven and let cool for 15 minutes to set. Sprinkle with additional basil leaves.
