Salmon With Spring Onion And Dill
Serves: 4
Preparation: 10 minutes
Cooking: 15 minutes
Ingredients:
- 4 salmon fillets
- 4 spring onions, finely sliced
- 1 cup rocket
- 4 red radishes, thinly sliced
- 1 lemon, cut into wedges
- ¼ cup fresh dill, chopped
- 3 tbs fresh lemon juice
- 4 tbs extra virgin olive oil
- 1 tsp homemade dry seasoning
- 1 tsp paprika
- ½ tsp black pepper, freshly ground
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Preheat oven to 200°C. Line a small baking dish with baking paper.

Step 3
Mix the spices and season the fish filets on both sides. Place the fillets in a baking dish and spray with olive oil. Bake each side of the fish for 10 minutes.

Step 4
Meanwhile, combine the rocket and radish in a medium-sized bowl. Drizzle with 2 tablespoons of olive oil and lemon juice. Mix gently to combine.

Step 5
Add 2 tablespoons of olive oil to the frying pan. Add the spring onion and dill and cook over medium heat for 4-5 minutes, or until it is tender.

Step 6
Divide the fish among the serving plates. Pour over the spring onion and dill mixture. Serve with lemon wedges and rocket salad.

Serving suggestions:
- Serve with grilled slices of Turkish bread
- Serve with crusty bread slices
- Replace the rocket salad with potato salad
