Even for beginners, this is a very easy and healthy dish to make. Try salmon with a garden salad today for lunch or dinner.

Ingredients for salmon with garden salad:
- 4 salmon filets
- 1 packet of baby spinach and rocket leaves
- 1 red capsicum
- 4 cloves garlic
- 250 g cherry tomatoes
- 1 medium cucumber
- 1 red onion
- Juice of 1 lemon
- 3+ 2 table spoons extra virgin olive oil
- Fresh parsley leaf chopped
- 200 g bocconcini cheese drained
- 1 + 1 tsp homemade dry seasoning
- 1 tsp Himalayan salt
- ½ tsp black pepper
Preparation:
Step 1
Peel the vegetables and soak them in a solution of baking soda for 15 minutes.
Step 2
Wash the salmon filets in filtered water and pat dry. Preheat the oven to 200°C.
Step 3
Line a medium baking dish with baking paper and place the salmon fillets in it. Sprinkle the fillets with salt, pepper, dry seasoning and olive oil and place the dish in the oven. Bake for 10 minutes, then turn the fillets over and bake for another 10 minutes, or until cooked to taste.
Step 4
Chop the vegetables and put them in a medium bowl.
Step 5
In a small bowl, mix the olive oil, salt and lemon juice and stir to combine, then pour over the salad. Mix the salad to coat.
Step 6
Divide the salad onto serving plates, add the salmon filets and bocconcini and garnish with a parsley leaf.
- You can also add a few olives to the salad.
