Easter Chocolate Cake

Easter Chocolate Cake

Preparation: 20 minutes

Cooking: 15 minutes

Ingredients:

  • 5 free-range eggs
  • 40 g cocoa powder + 20 g for the cream
  • 4 tbs raw sugar + 2 tbs for the cream
  • 50 g butter, room temperature
  • 200 g sour cream
  • Pinch of Himalayan salt

Directions:

Step 1

Preheat the oven to 180°C.  Line a medium-sized baking tray with baking paper.

In a medium bowl, beat the eggs and sugar with an electric mixer until light and fluffy. Add the cocoa powder and salt and beat well to combine. Pour the mixture into the baking tray and bake for 15 minutes. Remove the pan from the oven and invert onto a tray. Remove the baking paper and let the cake cool.

Meanwhile, in a medium bowl mix the butter and sugar until light and fluffy. Add the sour cream and cocoa powder and beat until smooth. Divide the cream into 3 bowls.

Step 4

Trim the edges of the cake and set aside. Cut the cake into 3 equal layers and place one layer on a platter. Spread a third of the cream over the crust and cover it with the second crust. Spread the second third of the cream over it and cover with the third crust. Then, spread the remaining cream on the top and sides of the cake.

Finely chop the edges of the cake into crumbs. Sprinkle the crumbs over the top of the cake and press into the sides.
