Cinnamon – Walnut Rolls
Ingredients:
- 530 g plain flour
- 320 ml of milk
- 50 g raw sugar
- 1 large free-range egg
- 60 g unsalted butter, melted
- ½ tsp Himalayan salt
- 1 instant dry yeast
Filling:
- 150 g raw sugar
- 2 tbsp cinnamon
- ½ cup walnuts, roughly chopped
- 3 tbsp unsalted butter, melted
Directions
Step 1
For the dough, combine the dry ingredients in a large mixing bowl with a spatula. Add the egg, butter, and milk and mix well to combine. Turn the dough out onto a floured surface and knead by hand for 5 minutes, or until smooth. If using a mixer, knead for about 3 minutes. Transfer the dough to a greased bowl, cover it with plastic wrap, and let rise for 2 hours, or until doubled in size.

Step 2
For the filling, mix the raw sugar, cinnamon, and walnuts, and set aside.

Step 3
Turn the risen dough onto a lightly floured surface and roll it into a rectangle about 1cm thick. Brush the entire surface of the dough with melted butter and sprinkle generously with the mixture of sugar, cinnamon, and walnuts. Roll up the dough from the longer side and cut the roll into 2 cm pieces. Place the rolls on a baking tray lined with baking paper, sprinkle them lightly with raw sugar, cover with a tea towel, and leave to rise for an hour.

Step 4
Preheat the oven to 180°C. Uncover the risen rolls and bake for 40 minutes or until golden brown. Remove the rolls from the oven and set aside to cool.

- You can make the dough in advance, and leave it in an oiled zip bag in the refrigerator for 24 hours.
