Healthy Green Cream Soup

Healthy Green Cream Soup

Serves: 4

Preparation: 30 minutes + soaking time

Ingredients:

  • 500 g broccoli, chopped
  • 5 celery sticks, chopped
  • 200 g kale, chopped
  • 1 green capsicum, chopped
  • 1 large onion, chopped
  • 2 cloves of garlic, finely chopped
  • 300 g peas
  • 3 tbs extra virgin olive oil
  • 3 bay leaves (optional)
  • 1 tbs homemade dry seasoning
  • 1 tsp Himalayan salt
  • ½ tsp black pepper
  • 5 cups filtered water
  • Parsley leaf, finely chopped, for serving
  • Sour cream, for serving

Directions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 2

Chop the vegetables and set aside.

Step 3

Heat the oil in a medium pan and add the onion. Cook, stirring constantly, for 5 minutes or until translucent and fragrant. Add broccoli, celery sticks and bay leaves to the pan and cook for another 5 minutes, then add water and stir to combine.

Step 4

Add peas, kale, capsicum, garlic and spices and cook for another 10 minutes, or until the vegetables are soft. 

Step 5

Remove the bay leaves from the soup and blend the soup with a stick blender until smooth. Taste the soup and season as desired.

Step 6

Divide the soup into serving bowls, pour over a spoonful of sour cream and a chopped parsley leaf.

Serve with grilled halloumi cheese and wholemeal toast.

Tips:

  • Serve with grilled tofu;
  • Replace wholemeal toast with grilled Turkish bread;
  • Instead of sour cream, you can use cooking cream.
