Easy Leftover Pasta Bake

Leftovers are a common, but not always popular and pleasant meal. Therefore, we are all looking for simple and useful ideas on how to improve the taste in order to enjoy it more. As for leftover pasta, there are many ways to use it in your next meal, so we bring you a recipe for a delicious and easy leftover pasta bake.

Serves: 2

Preparation: 15 minutes

Cooking: 40 minutes

Ingredients:

  • 2 portions of leftover pasta
  • 1 brown onion, chopped
  • 2 carrots, chopped
  • 250 g cherry tomatoes, halved
  • 2 cloves garlic, chopped
  • 150 g cheddar cheese, grated
  • 50 ml extra virgin olive oil
  • 1 tsp homemade dry seasoning
  • 1 tsp Himalayan salt
  • ½ tsp black pepper
  • ½ tsp chili flakes
  • Basil leaves to serve

Directions:

Step 1

Soak the vegetables in a baking soda solution, then rinse and dry. Preheat the oven to 180 °C

Step 2

Chop the onion, carrots, and garlic. Cut the cherry tomatoes in half. Pour the oil into a medium-sized pan, add the onion, and cook over medium heat until it is translucent and soft. Add carrots and garlic and continue to cook for another 5 minutes.

Step 3

Add pasta to the mixture and mix well to combine. If necessary, add a little water. Add spices and tomatoes and cook for 5 minutes. Stir until pasta is coated with oil and vegetables. Remove from heat.

Step 4

Transfer the mixture to a glass baking dish and spread it evenly over the dish. Top with cheese, put in the oven, and bake for 15 minutes.

Garnish with basil leaves and serve with Greek yogurt or a bowl of salad.

Tips

  • Add minced meat to the mixture and cook with the vegetables until brown;
  • Use Mozzarella cheese instead of Cheddar;
  • Add sour cream to make it creamier.
