Potato is a popular ingredient when it comes to cooking dinner. If you add a colourful salad to the meal, you get a winning combination for everyone’s taste. So, if you are a potato lover, try our vegetarian onion and potato bake with salad recipe and enjoy.

Vegetarian Onion and Potato Bake with Salad
Serves: 4
Preparation: 15 minutes
Cooking: 45 minutes
Ingredients:
- 1 kg potatoes, cut into large cubes
- 1 large onion, cut into large cubes
- 2 spoons extra virgin olive oil
- 1 tsp Himalayan salt
- 1 tsp homemade dry seasoning
- 1 tsp paprika, ground
- ½ tsp black pepper, freshly ground
Salad:
- 4 large lettuce leaves, sliced
- ½ cup rocket, sliced
- 2 large tomatoes, roughly chopped
- 1 red green capsicum, chopped
- 3 cloves garlic, sliced
- 1 medium avocado, chopped
- ½ cup stuffed green olives
- ½ tsp Himalayan salt
- 3 tbs extra virgin olive oil
- 3 tbs organic apple cider vinegar with the mother
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Preheat the oven to 200°C.
Step 3
Cut the potatoes and onion into large cubes. Add the spices to a large mixing bowl. Add the potatoes and mix well to coat all the cubes on all sides.

Step 4
Add oil to a baking tray. Place the onions in the tray and spread them on the bottom. Place the potatoes over the onions. Cover the baking tray with a lid or a piece of aluminium foil. Bake for 40 minutes, then uncover and turn the potatoes. Bake for another 5 minutes, or until the potatoes become crispy and cooked through.

Step 5
Meanwhile, for the salad, chop and slice all the ingredients, as directed above and place in a large bowl.

Step 6
Mix salt, olive oil and apple cider vinegar in a small bowl. Pour over the salad and mix well to combine. Add olives on top.
Tips:
- Add baby bocconcini to the salad to enrich the taste
