Healthy Caesar Salad With Kale
Serves: 4

Cooking: 15 minutes
Ingredients:
- 4 free-range eggs
- 4 bacon rashers, rind removed, chopped
- 2 slices of sourdough bread, torn into small pieces
- 1 bunch kale, chopped
- 1 bunch of butter lettuce leaves
- 1 small carrot, finely grated
- ½ cup stuffed olives
- 2 cloves garlic, finely chopped
- ½ cup almond flakes, toasted
- ½ cup parmesan, shaved
- ½ cup extra virgin olive oil
- ½ tsp Himalayan salt
- ½ tsp black pepper, freshly ground
- ½ chilli flakes
Dressing:
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 3 cloves garlic, minced
- 3 tbs lemon juice
- ¼ tsp Himalayan salt
- ¼ tsp black pepper, freshly ground
Directions:
Step 1
Preheat the oven to 200°C. Line 2 medium baking trays with baking paper.
Step 2
Place the bacon on one prepared tray and the sourdough bread on the other. Drizzle the bread with olive oil and season with salt and pepper. Bake the bacon for 6 minutes and the bread for 10 minutes or until it becomes crispy.

Step 3
Meanwhile, place the eggs in a small saucepan. Cover with cold, filtered water and bring to a boil over medium heat. Boil for 7 minutes or until cooked to your liking. Refresh under cold water. Peel and slice.

Step 4
Combine lettuce, kale, garlic, carrot, half of the Parmesan cheese, and dressing in a bowl and toss to combine. Top with the olives, bacon, eggs, and bread. Sprinkle with the remaining Parmesan cheese and almond flakes. Season with freshly ground black pepper and serve.

Serving suggestions:
- Serve with grilled slices of halloumi cheese
- Serve with Greek yoghurt, traditional style
Tips:
- Add 1 teaspoon of anchovy sauce for a richer taste
- Replace almonds with toasted walnuts
