Valentine’s Day Limoncello Cake

Valentine’s Day Limoncello Cake

Preparation: 20 minutes

Baking: 25 minutes

Ingredients:

  • 300 g peeled almonds
  • 200 g sugar
  • 250 g white chocolate, chopped
  • 8 free-range eggs, separated
  • 2 organic lemons (zest + juice)
  • 1 packet vanilla pudding powder
  • 70 ml Limoncello

      Compote:

  • 300 g strawberries
  • 150 g fruit juice
  • 1 sachet vanilla sugar
  • 1 tbs cornstarch
  • 30 g powdered sugar

Directions:

Step 1

Preheat oven to 170°C. Line a medium-sized round mould with baking paper.

Step 2

Soak lemons and strawberries in a baking soda solution for 15 minutes, then rinse and dry.

Zest and juice the lemons and set aside.

Step 4

In a food processor, grind the white chocolate and almonds together until fine. Beat the egg yolks with half the sugar until pale and creamy. Stir in the chocolate and almond mixture, zest and lemon juice. Mix well to combine. Add the vanilla pudding powder and mix everything together.

Step 5

To make the meringue, beat the egg whites with a mixer until stiff. Gradually add the remaining sugar and continue mixing until the mixture is glossy and thick. Gently fold the mixture into the batter.

Step 6

Pour the mixture evenly into the mould lined with baking paper and place in the preheated oven. Bake for 25 minutes, or until the skewer inserted in the middle of the cake comes out clean. Remove the cake from the oven and let it cool completely.  

Step 7

Invert the cake onto a plate and remove the baking paper. Drizzle the cake with limoncello.

Step 8

Compote:

In a saucepan, combine the fruit juice, cornstarch, powdered sugar and vanilla sugar. Bring to a boil, stirring constantly. Add the strawberries and cook for 1 minute. Remove from the heat and leave to cool.

Step 9

Sprinkle the cake with powdered sugar and cut into slices. Place slices on the plates with a spoonful of the strawberry compote.

Serving suggestions:

  • Serve with a scoop of vanilla ice cream.

Tips:

  • Replace the limoncello with lemon juice
  • Refrigerate the remaining cake for up to 5 days
  • Freeze the remaining cake (without the compote) for up to 3 months
