Vegetarian Burgers in Crusty Bread Rolls
Serves: 6

Ingredients:
- 6 crusty bread rolls
- 1 large carrot, finely grated
- 1 large onion, finely chopped
- 1 large capsicum, finely chopped
- 1 can mixed beans, rinsed
- 2 free-range eggs
- 3 tbsp tomato puree
- 5 tbsp bread crumbs
- 3 + 3 tbs extra virgin olive oil
- 1 tsp Himalayan salt
- 1 tsp homemade dry seasoning
- ½ tsp black pepper, freshly ground
Filling:
- 2 tomatoes, sliced
- 6 lettuce leaves
- 6 tbsp sour cream
- 6 tbsp ketchup
- 1 medium onion, sliced
- 6 slices of cheddar cheese
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Heat the oil in a medium frying pan over medium heat. Add the onion, capsicum, and carrot and cook for 10 minutes, or until softened and fragrant. Add the spices and beans, and cook for another 2 minutes. Remove from heat and leave to cool for 5 minutes.

Step 3
Beat eggs in a small bowl until fluffy. Add tomato puree and mix to combine. Pour the mixture into the onion mixture and mix well. Gradually add bread crumbs to the mixture, stirring constantly.

Step 4
Shape the mixture into 6 burgers.
Step 5
Heat oil in a large frying pan over medium heat. Add the burgers and cook for 5 minutes on each side.
Step 6
Cut the bread roll in half. Spread sour cream on each part of the roll. Top with lettuce and ketchup. Add onion slices and a burger. Place tomato slices over the burger and top with cheese. Cover with the top of the roll. Repeat with the remaining bread rolls.
