Healthy Homemade Roasted Red Pepper Sauce

Healthy Home-Made Roasted Red Pepper Sauce

Serves: 4

Preparation: 20 minutes

Cooking time: 20 minutes

Ingredients:

  • 2 medium red bell peppers, sliced
  • 1 large tomato, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, chopped
  • ½ cup organic almond milk
  • 1 lemon juice
  • ½ cup walnuts, toasted
  • ÂĽ cup parsley leaf, chopped.
  • ½ tsp Himalayan salt
  • ½ tsp homemade dry seasoning
  • ½ tsp ground black pepper
  • ½ tsp turmeric powder

Directions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 2

Heat the oven to 200°C.

Step 3

Cover the baking tray with baking paper. Place sliced peppers, sliced tomatoes, sliced onion and chopped garlic on the baking tray. Bake for 20 minutes, or until the vegetables are tender.

Step 4

Place walnuts in a medium frying pan over medium heat and toast, stirring occasionally, until golden brown and fragrant. Remove from heat and set aside to cool.

Step 5

Add the vegetables, almond milk, walnuts, parsley leaf and lemon juice to a medium bowl and beat with a stick blender until smooth. Add the spices and blend again to combine. Taste for additional seasoning. 

Healthy Home-Made Roasted Red Pepper Sauce

Serving suggestions:

  • Serve with spaghetti
  • Serve with grilled Turkish bread as a spread
  • Pour over vegetable stir fry
  • Serve as a vegetable dip for finger foods

Tips:

  • Replace almond milk with milk of your choice
  • Replace the parsley leaf with a fresh mint leaf
  • Replace walnuts with nuts as desired
  • Replace lemon juice with lime juice
  • Add nutritional yeast to get a creamy texture and improve the taste
  • Store leftover sauce in an airtight container in the refrigerator for up to 5 days
  • Make the sauce in advance and store it in an airtight container for later use
