When it comes to healthy soups, it is important to include the ingredients that we like, but also the ones we don’t like so much. So, if you are like me, and are not crazy about broccoli, this is a great recipe that completely masks the texture, even the “green” taste of broccoli. Our recipe for a healthy broccoli cream soup with tofu will satisfy vegetarians as well. Try the recipe and enjoy.
Healthy Broccoli Cream Soup with Tofu
Serves: 6
Preparation: 15 minutes
Cooking: 20 minutes
Ingredients:
- 500 g broccoli, cut into florets
- 300 g celery sticks, cut into pieces
- 200 g peas
- 1 large onion, chopped
- 4 cloves garlic, chopped
- 250 ml cooking cream
- 250 g smoked tofu, cut into cubes, toasted
- 1 cup parsley leaf, finely chopped
- 2 tsp Himalayan salt
- 1 tsp homemade dry seasoning
- ½ tsp black pepper, freshly ground
- 3 tbsp extra virgin olive oil
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Heat the olive oil in a large sauce pan. Add the onion and cook, stirring, for 2 minutes, or until fragrant. Add the garlic and cook for another minute.

Step 3
Add the broccoli, celery and peas to the onion mixture and stir to combine. Add filtered water just to cover he vegetables and cook over medium heat for 20 minutes, or until the vegetables are soft.

Step 4
Meanwhile, cut the tofu into small cubes and toast in a frying pan, over medium heat, until lightly browned. Remove from heat and set aside.

Step 5
Strain the liquid, reserving it, leaving a little water in the sauce pan with the vegetables. Blend the vegetables with a stick blender to get a smooth mixture. Gradually add the reserved liquid to the pot, until you get desired thickness.

Step 6
Divide the soup among the plates. Spoon the cooking cream on top. Add some tofu and parsley on top of the cream and serve.

Tips:
- Replace the tofu with slices of grilled Turkish bread
- Replace the parsley with mint leaves
- Replace cooking cream with sour cream
- Keep the left-over soup in an airtight container in the refrigerator for up to 3 days
