Healthy Alkaline Detox Soup

Healthy Alkaline Detox Soup

Serves: 4

Preparation: 15 minutes

Cooking: 5 minutes

Ingredients:

  • 2 cups cooked green peas
  • 1 cup spinach
  • 1 cup parsley leaf, finely chopped
  • 1 large celery stick with leaves
  • 2 cloves garlic
  • 1 small onion
  • 2 cups filtered water
  • 1 cup organic almond milk
  • 1 teaspoon Himalayan salt
  • 1 teaspoon dry homemade seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper 
  • 4 teaspoons natural Greek yoghurt
  • ½ cup walnuts chopped

Instructions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse, dry and chop.

Step 2

Cook green peas and set aside to cool.

Step 3

Combine green peas, spinach, celery, ½ of the parsley, garlic, onion, and water in a medium bowl and puree with a stick blender until smooth. Add the almond milk and spices and mix to combine.

Step 4

Transfer the mixture to a medium saucepan and heat gently until hot, but not boiling.

 Step 5

Divide the soup into serving bowls. Top with remaining parsley, Greek yogurt, and walnuts.

Tips:

  • Serve topped with sliced almonds;
  • Replace Greek yoghurt with coconut cream;
  • Add shaved carrots to garnish and improve the quality of detoxification.
