Parmesan and Cottage Cheese Polenta Slices

Polenta has been a favourite dish in many cultures. There are many ways of preparation, as well as many flavours that are added. Whether you are a fan, or among those who never tried it, here is a great and easy polenta slices recipe for you to try and to enjoy.

Serves: 6

Preparation: 15 minutes

Cooking: 20 minutes

Ingredients for Polenta Slices:

  • 2 free range eggs
  • 2 cups polenta
  • 2 cups plain flour
  • 1 cup finely grated parmesan + ½ cup to serve
  • 200 g cottage cheese
  • 3 tsp Himalayan salt
  • 1 cup parsley leaf, finely chopped
  • 2 cups almond milk
  • 2 cups filtered water

Directions:

Step 1

Line a medium-sized baking tray with baking paper.

Step 2

Preheat the oven to 180° C.

Step 3

Beat eggs with salt, add milk and mix until combined. Gradually add the polenta, flour and water, constantly stirring.

Step 4

Add finely chopped parsley leaf and a cup of parmesan cheese to the mixture and mix well to combine.

Step 5

Pour the mixture into a baking dish and spread with a spatula. Spread the cottage cheese evenly on top of the mixture with a spoon.

Step 6

Bake for 20 minutes, or until the toothpick inserted in the centre comes out clean. Remove from the oven and let cool. Cut into slices and sprinkle with the remaining parmesan cheese.

Tips:

  • Serve as a side dish, for morning/afternoon tea, as a snack, or in a lunch box;
  • To serve add sour cream;
  • For different taste, can be cooked without parmesan;
  • Replace the parsley leaf with finely chopped fresh rosemary;
  • Add finely chopped capsicum to the mixture to make it tastier.
