Mussels With Tomato and Garlic Sauce

Ingredients:

  • 1 kg mussels scrubbed and debearded
  • 1 onion, finely chopped
  • 3 tbs finely chopped parsley (Plus 3 tbs for serving)
  • 6 cloves of garlic, finely chopped
  • 2 cups drained canned tomatoes in thick puree, chopped
  • ½ tsp Himalayan salt
  • ½ tsp dried homemade seasoning
  • ¼ cup extra virgin olive oil
  • ½ tsp Italian herbs
  • ½ tsp dried red pepper flakes
  • ½ tsp ground black pepper
  • 100 ml dry white wine
  • Grilled bread, for serving

Method:

Step 1

In a large pot, heat the olive oil over medium-low heat. Add the onion and cook for 5 minutes until soft and fragrant, then add the garlic and cook for a further 1 minute.

Stir in diced tomatoes, parsley, dried seasoning, dry red pepper flakes, and wine. Reduce the heat, and cook, partially covered, for 20 minutes, stirring occasionally.

Remove any mussels with broken or open shells that do not clamp shut when tapped. Add the rest of the mussels to the pot, cover, and cook, shaking the pot occasionally, until the mussels open. (Discard any shells that do not open).

Stir the black pepper and dried homemade seasoning into the broth. Taste the broth and, if needed, add Himalayan salt.

Step 5

Garnish the mussels with parsley and serve with the grilled bread.
