3 Recipes With Celery

Celery is a plant that belongs to the Apiaceae family, which includes carrots, parsnips, parsley, and celeriac. Its crunchy stalks are popular as a low-calorie snack and provide a number of health benefits. With its taste, it greatly contributes to soups and stews, as well as to homemade dry spices. It is full of nutrition and has excellent medicinal properties.

Here are 3 recipes with celery:

1. Celery Smoothie

Serves: 2

Ingredients:

  • 1 medium cucumber 
  • 3 celery sticks
  • ½ zucchini
  • 1 handful spinach
  • ½ pineapple
  • 300 ml filtered water

Method:

Step 1

Soak the vegetables in the baking soda solution, rinse, dry, and peel.

Step 2

Put all the ingredients in a blender, add water and mix until you get a smooth mixture.

Step 3

Pour the smoothie into serving glasses and serve fresh.

2. Celery Soup

Serves: 4

Ingredients:

  • 1 medium celeriac chopped
  • 2 sticks of celery, finely chopped
  • I medium zucchini grated
  • 3 large carrots grated
  • ¼ cabbage head grated
  • 1 parsnip grated
  • 1 red capsicum chopped
  • 1 small onion chopped
  • 3 cloves garlic finely chopped
  • 1 tsp dill
  • 2 tbs extra virgin olive oil
  • 2 tsp dry seasoning
  • 1 tsp Himalayan salt
  • 1.5 l filtered water
  • Sour cream for serving

Method:

Step 1

Soak all the vegetables in the baking soda solution, rinse and dry.

Step 2

Peel and chop the onions and garlic. Pour the oil into a medium pan over medium heat. Add onions and fry until translucent. Peel and chop the celeriac and celery and put them in the pan. Add garlic and capsicum and cook for 2 minutes. Add water and grated zucchini, carrots, cabbage, and parsnip. Bring to a boil and cook for 15 minutes. Add dill, dry seasoning, and salt, and cook for another 5 minutes.

Step 3

Divide the soup into serving bowls, spoon in the sour cream and serve warm.

3. Celery Salad

Serves: 4

Ingredients:

  • 200 g baby spinach & rocket salad
  • 300 g cherry tomatoes, halved
  • 1 medium avocado, stoned, peeled, sliced
  • 1 small brown onion sliced
  • 2 Lebanese cucumbers sliced
  • 2 celery sticks finely sliced
  • 400 g can Black Beans, rinsed, drained
  • 60 ml organic apple cider vinegar
  • Himalayan salt, pepper
  • Parsley leaf finely chopped
  • 1 medium lemon sliced

Directions:

Step 1

Peel and soak the vegetables in a baking soda solution, rinse and dry.

Step 2

Combine the spinach and rocket salad, tomato, celery, avocado, cucumbers, onion, and black beans in a bowl. Combine the vinegar, oil, salt, and pepper in a jar and stir to combine. Pour the dressing over the salad and toss to combine.

Step 3

Divide the salad among serving plates. Sprinkle with parsley leaf and decorate with lemon slices. Serve with grilled halloumi or grilled Turkish bread.

Celery is rich in vitamins K, A, C, and folate, and has lesser amounts of minerals like manganese, potassium, calcium, and sodium. It contains a large amount of fiber and is a great source of water. Celery is a good source of antioxidants like phytonutrients and flavonoids and is rich in electrolytes.
