3 Healthy Recipes with Beet Leaves

Beet leaves are part of the beet plant and are healthier than the beetroot. That is why they are used for their medicinal properties, not just as food. They are rich in vitamins, minerals, and antioxidants, so regular consumption can improve your health.

Here are some ideas on how to use Beet Leaves in your diet:

1. Green smoothie

Serves: 2

Preparation: 5 minutes + soaking time

Ingredients:

  • 1 medium banana
  • ½ cup frozen berries
  • 1 small broccoli floret
  • A handful of beet leaves, chopped
  • 1 cup organic almond milk
  • Pinch Himalayan salt

Method:

Step 1

Wash the banana, broccoli, and beet leaves in a solution of baking soda, then rinse and dry.

Step 2

Place all the ingredients in a blender and process for 2 minutes, or until smooth.

*Smoothies provide the most benefits when consumed slowly.

2. Garlic beetroot leaf stir fry

Serves: 4

Preparation: 5 minutes + soaking time

Cooking: 15 minutes

Step 1

Wash the garlic and beet leaves in a solution of baking soda, then rinse and dry.

Step 2

Place the oil in a medium pan. Chop the garlic, add to the pan and fry over low heat until fragrant. Roughly chop the beet leaves, add them to the garlic, and stir to combine. Add the spices and simmer for 15 minutes or until tender, stirring occasionally.

*Serve with grilled haloumi or bocconcini.

3. Beet leaves stew

Serves: 4

Preparation: 10 minutes + soaking time

Cooking: 20 minutes

Ingredients:

  • 600 g beet leaves
  • 1 medium onion
  • 3 + 2 cloves of garlic
  • 50 + 50 ml extra virgin olive oil
  • 200 ml filtered water
  • 1 tsp Himalayan salt
  • 1 tsp homemade dry seasoning
  • ½ tsp black pepper
  • 1 tbsp plain flour

Step 1

Wash the garlic, onion, and beet leaves in a solution of baking soda, then rinse and dry.

Step 2

Put 50 ml of olive oil in a medium saucepan. Chop the onion and 2 cloves of garlic, add to the pan and fry over low heat until fragrant. Roughly chop the beet leaves, add to the garlic and stir to combine. Add the spices and water and cook for 15 minutes or until tender, stirring occasionally. If necessary, add more water.

Step 2

Put 50 ml of olive oil in a small pan, chop 2 cloves of garlic and add to the pan. Cook over low heat until fragrant. Add the flour and mix well to combine. With a serving spoon take a little water from the stew, add it to the mixture of garlic and flour and stir well to even out the lumps. Pour this mixture into the stew, mix well to combine, and cook for another minute to thicken.

*You can add more flour OR water to get the density according to your taste.

**Serve as a side dish with roasted pork belly, crumbed chicken, or a main course of your choice.
