Easy Christmas Fruit Cake

Ingredients

180 g unsalted butter, softened

200 g flour

200 g raw sugar

4 free-range eggs

1 tsp baking powder

2 tsp ground cinnamon

2 tsp vanilla extract

500 g mixed dried fruit

100 g sultanas

100 g dried cranberries

120 g almonds, ground

100 g walnuts, ground

Zest and juice of 1 large orange

Zest of 1 large lemon

100 ml rum

Directions

Step 1

In a medium saucepan, add the butter, raw sugar, dried mixed fruit, sultanas, dried cranberries, orange and lemon zest and juice, cinnamon, vanilla extract, and rum. Heat it on medium heat until the mixture comes to a gentle bubble, afterwards turn down the heat and simmer for 5 minutes, stirring occasionally. Remove the saucepan from the heat and leave to cool for 45 minutes.

Into the cooled mixture, add the ground walnuts and almonds, whisked eggs, flour and baking powder, and mix all together until everything is combined. 

Step 3

Preheat the oven to 180°C and line a 20cm round cake tin with baking paper. Pour the mixture into the cake tin and spread evenly. Bake the cake for 45 minutes, then turn down the heat to 150°C and bake for a further 60-90 minutes, until the cake is dark brown on the top and an inserted skewer comes out clean.

Step 4

Leave the cake to cool in the cake tin for 20 minutes, then turn it out onto a wire rack and leave it to cool completely.

Serving tips

  • Serve the Christmas Fruit Cake sprinkled with icing sugar, ice cream, whipped cream, cranberry sauce, brandy sauce, or vanilla custard.
  • Serve with coffee or tea.

Tips

  • During the baking if the cake starts to darken too much, cover the top with baking paper or aluminium foil.
  • Wrap the plastic wrap or baking paper tightly around the fruit cake to prevent it from drying out.
  • Place in an airtight container and store it at room temperature.
  • If stored properly, an unused Christmas Fruit Cake should keep well for 3 months at room temperature.
  • If you want to keep it longer than 3 months, freeze it for up to a year.
