Colourful Homemade Beet and Carrot Sauce
Serves: 8
Preparation: 10 minutes
Cooking: 20 minutes
Ingredients:
- 2 large beets, peeled and cut into cubes
- 2 large carrots, sliced
- 1 celery stick, sliced
- ½ cup fresh parsley leaf, finely chopped
- 1 cup organic tomato puree
- 1 lemon juice
- 2 cups filtered water
- ½ tsp Himalayan salt
- ½ tsp homemade dry seasoning
- ½ tsp ground black pepper
Directions:
Step 1
Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.
Step 2
Place beet cubes, sliced carrots and sliced celery in a medium-sized saucepan and cover with filtered water. Bring it to a boil over medium heat, stirring occasionally. Reduce the heat and cook for 10 minutes, or until the vegetables are tender. Remove from heat and drain.

Step 3
Add the beets, carrots, celery and tomato puree to a blender and blend until smooth. Then, add lemon juice, parsley and spices and blend for another 1 minute. Add additional ingredients of your choice.

Serving suggestion:
- Serve with grilled Turkish bread or tacos as a spread
- Pour over the vegetable stir fry
- Serve as a vegetable dip for finger foods
- Serve with veggie burgers
- Use on plant-based pizza

Tips:
- Replace parsley leaf with fresh mint leaf
- Replace lemon juice with lime juice
- Cook the beets and carrots ahead of time and store them in an airtight container in the refrigerator for up to 3 days
- Store leftover sauce in an airtight container in the refrigerator for up to 5 days
- Make the sauce in advance and store it in an airtight container for later use
