Chilli Prawn Spaghetti

Chilli Prawn Spaghetti

Chilli Prawn Spaghetti

Serves: 4

Preparation: 10 minutes

Cooking: 20 minutes

Ingredients:

  • 500 g spaghetti pasta
  • 300 g pre-cooked tiger prawns
  • 4 garlic cloves, thinly sliced
  • 4 medium tomatoes, finely chopped
  • ½ cup parsley leaves, finely chopped
  • ½ cup Parmesan cheese, grated
  • 3 tbs extra virgin olive oil
  • 1 tsp Himalayan salt
  • 1 tsp homemade dry seasoning
  • ½ tsp dried chilli flakes
  • ½ tsp black pepper, freshly ground

Directions:

Step 1

Cook the pasta in a large pot of salted boiling water for 10 minutes, or until al dente. Drain. Reserve ½ cup cooking liquid and set aside. 

Step 2

Meanwhile, heat 3 tablespoons of extra virgin olive oil in a large frying pan over medium heat. Add thinly sliced garlic and dried chilli flakes. Cook, stirring, for 1 minute, until fragrant. Add prawns to the garlic mixture and cook for 2-3 minutes, stirring occasionally. Then, add the pasta and tomatoes and the saved liquid and cook for a further 3 minutes. Add half of the parsley leaves and spices and mix well to combine.

Divide the pasta among the serving plates. Sprinkle with the remaining parsley and Parmesan cheese.
