Chicken, Broccoli and Cashew Nuts Stir Fry

Serves: 4

Preparation: 20 minutes

Cooking: 30 minutes

Ingredients:

  • 500 g free-range chicken breast, cut into stripes
  • 500 g penne pasta
  • 1 medium onion, chopped
  • 3 cloves garlic, finely sliced
  • 2 medium carrots, finely grated
  • 1 medium head of broccoli, cut into florets
  • 1 red capsicum, deseeded, chopped
  • ½ cup unsalted cashews
  • ½ cup extra virgin olive oil
  • 1 tsp Himalayan salt
  • 1 tsp homemade dry seasoning
  • ½ tsp chilli flakes (optional)
  • ½ tsp black pepper, freshly ground
  • ½ cup parsley leaf, finely chopped
  • ½ cup Parmesan, finely grated
Directions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 2

Cook the pasta in a large pot of salted boiling water for 5 minutes, until al dente.

Step 3

Heat half of the olive oil in a large frying pan over medium heat. Add the chicken and cook, stirring, for 5 minutes, or until the chicken is golden brown. Transfer the meat to a plate and cover to keep warm.

Step 4

Add the rest of the olive oil to the pan and heat over medium heat. Then, add the onion and cook, stirring, for 1 minute, or until the onion is translucent. Add the capsicum, garlic and broccoli and cook, stirring occasionally, for 5 minutes, or until the broccoli is tender. Add carrots and cashews and mix to combine.

Step 5

Add the chicken and pasta to the onion mixture and stir-fry covered, for 10 minutes until everything is well coated and cooked. Remove from heat. Sprinkle with parsley and Parmesan cheese.

Tips:

  • Replace the cashews with walnuts
