Healthy Bean and Kale Stew with Pangrattato

Healthy Bean and Kale Stew with Pangrattato

Serves: 4

Ingredients:

  • ½ bunch kale, stalks discarded, leaves torn
  • 2 cans four-bean mix, rinsed, drained
  • 1 onion, finely chopped
  • 2 carrots, finely chopped
  • ½ cup parsley leaves, finely chopped
  • 2 tomatoes, chopped
  • 150 g roughly thorn stale wholemeal bread
  • 2 tbs quinoa
  • 2 celery sticks, finely chopped
  • 6 garlic cloves, finely chopped
  • 2 tbs rosemary leaves, finely chopped
  • 2 springs rosemary
  • 1/3 cup extra virgin olive oil
  • ½ cup Parmesan cheese, finely grated, to serve
  • 1 tsp Himalayan salt
  • 1 tsp homemade dry seasoning
  • ½ tsp black pepper, freshly grated
  • 2 cups filtered water

Directions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 2

Heat 2 tablespoons of olive oil in a large, wide saucepan over medium-high heat. Add the onion, carrot, celery, 4 chopped garlic cloves and chopped rosemary and cook, stirring frequently, for 5 minutes.

Step 3

Add the beans, tomatoes, quinoa and water to the onion mixture and stir to combine. Bring to a boil, season, cover and reduce heat to medium-low. Simmer for 15 minutes. Stir in the kale and cook for another 10 minutes or until the kale wilts and softens.

Meanwhile, heat the remaining olive oil in a large frying pan. Add 2 chopped cloves of garlic, rosemary sprigs, and parsley, and cook for 1 minute. Add the bread and cook for 5 minutes, tossing regularly, or until the bread is golden brown and crispy.

Step 5

Sprinkle the pangrattato and Parmesan over the stew and serve.
