Easy Carrot Cake

Ingredients:

Cake

  • 300 g plain flour
  • 250 g raw sugar
  • 3 large free-range eggs
  • 100 g carrots, finely grated
  • 170 ml vegetable oil
  • 1 tbsp vanilla extract
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 2 tsp ground cinnamon
  • ½ tsp Himalayan salt
  • ½ tsp cloves, ground
  • 100 g walnuts, toasted, roughly chopped

Frosting

  • 250 g cream cheese
  • 60 g unsalted butter, at room temperature
  • 350 g icing sugar, sifted
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • Lightly toasted chopped walnuts, for garnish

Directions:

Step 1

Preheat the oven to 180°C. Line 2 round 22 cm cake pans with baking paper.

Step 2

Combine oil, eggs, sugar, and vanilla in a large bowl and mix until smooth.

Step 3

In a separate bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and cloves, and mix until combined. Stir in the carrot to coat, and add the dry ingredients to the egg mixture. Mix until all is combined and smooth. Stir in the walnuts. Divide the mixture between the cake pans and bake for 30 minutes, or until the skewer inserted into the centre of the cake comes out clean. Remove the pans from the oven and cool the cakes in the pans for half an hour, then turn the cakes onto a wire rack to cool completely.

For the frosting, beat the cream cheese and butter until smooth. Gradually add the icing sugar, beating constantly with a mixer. Add the lemon juice and vanilla and beat until the mixture is light and fluffy.

Remove the baking paper from the cake. Place one layer onto a platter and spread half of the frosting evenly over the cake.
Cover with the second layer and spread the remaining frosting over the top and sides of the cake. Sprinkle with walnuts.
