Valentine’s Day Almond Biscuits
Preparation: 15 minutes
Baking: 20 minutes
Ingredients:
- 3 free-range egg whites
- 300 g almonds, ground
- 150 g caster sugar
- 1 tsp orange zest
- ¼ tsp Himalayan salt
- 100 g almond flakes
Preparation:
Step 1
Preheat oven to 170°C. Line a baking tray with baking paper.

Step 2
Soak the orange in a baking soda solution for 15 minutes, then rinse and dry. Grate the zest and set aside.
Step 3
Whisk the egg whites with the salt until firm. Gradually add the sugar, whisking constantly, until you have a glossy and firm mixture. Stir in almonds and orange zest. The mixture should be thick and sticky.

Step 4
Place the almond flakes into a bowl.
Step 5
Take a tablespoon of the mixture and shape it into a ball with your hands. Press the ball into the almond flakes and place it on the baking tray. Continue until you have used up all the mixture.

Step 6
Place the baking tray in the oven and bake for 20 minutes, or until lightly browned. Remove from the oven and let it cool.

Serving suggestions:
- Serve sprinkled with powdered sugar and cinnamon.
- Serve sprinkled with powdered sugar and cacao.

Tips:
- Add more almonds for a thicker mixture. Roll out the dough and cut it out with a heart-shaped baking mould for a romantic version. Brush the biscuits with beaten egg white and press them into the almond flakes.
- Pack the biscuits in a cellophane bag and tie with a red ribbon.
- Store leftover biscuits in an airtight container and keep at room temperature for up to 10 days.
- Freeze leftover biscuits in an airtight container for up to 3 months.
