Traditional Easter Bread

Traditional Easter Bread

Preparation: 15 minutes + rising time

Baking: 40 minutes

Ingredients:

  • 500 g plain flour
  • 250 ml warm milk
  • 2 free-range eggs + 1 egg white
  • 7 g dry yeast
  • 4 tbs oil
  • 1 tsp raw sugar
  • 1 tsp Himalayan salt
  • 50 g butter, room temperature
  • 1 egg yolk
  • 50 g sesame seeds (optional)

Directions:

Step 1

Prepare a 30-centimetre diameter pan and line it with baking paper.

Step 2

Place the flour in a medium-sized bowl. Add the milk, sugar, and yeast and mix roughly to combine. Let the yeast rise for 10 minutes.

Add the oil, eggs, egg white, and salt to the mixture.  Mix the ingredients with a spatula, scraping the sides of the bowl. Remove the spatula and start kneading by hand, adding a little more flour if the dough is too wet. Add just enough flour so that the dough pulls away from your hand.

Step 4

Turn the dough onto a clean, floured surface and knead until it forms a nice, smooth ball. Place the dough into an oiled bowl, cover with a towel, and let it rise for 15 minutes.

Step 5

Turn the dough onto a clean work surface. Shape the dough into a roll without kneading it, and cut off about one-fifth of the dough, setting it aside. Roll the other part of the dough with a rolling pin into a rectangle about ½ a centimetre thick. Brush with softened butter, and then roll it up into a roll.

Preheat the oven to 200°C.  

Step 7

Cut the roll into 1 cm wide pieces and arrange them vertically in the pan on the outside. Roll out the small part of the dough into a rectangle. Using a sharp knife, cut the dough from one side towards the middle into strips 1 cm thick. Spread the butter over the whole side and roll the dough starting from the whole side towards the cut end. Bend the roll into a circle and transfer it to the centre of the pan. Let the dough rise for 15 minutes.

Step 8

Brush the bread with the beaten egg yolk and place it in the oven. Bake for 30 minutes, or until golden brown.

Tips:

  • Shape the bread as desired
  • Store leftover bread covered with a clean cloth in a plastic bag or an airtight container to keep it fresh for up to 4 days
