Roasted Pepper Pasta Bake

Roasted Pepper Pasta Bake

Serves: 4

Preparation: 15 minutes

Cooking: 30 minutes

Ingredients:

  • 500 g penne 
  • 3 large bell peppers, roasted, peeled, sliced
  • 3 cloves garlic, chopped
  • 1 medium onion, chopped
  • 1 can diced tomatoes
  • 1 cup almonds
  • ½ cup fresh parsley, finely chopped
  • ½ cup cheddar cheese, grated
  • ½ cup Parmesan cheese, ground
  • 3 tbsp extra virgin olive oil
  • 1 tsp chilli flakes
  • ½ tsp black pepper, freshly ground
  • 1 tsp homemade dry seasoning
  • 1 tsp Himalayan salt

Directions:

Step 1

Soak the vegetables in a baking soda solution for 15 minutes, then rinse and dry.

Step 2

Cook pasta in a large pot of boiling water according to packet directions or until al dente. Drain, reserving 1 cup of cooking liquid, and set aside.

Place the roasted pepper, almonds, onion, and garlic in a food processor and blend for 1 minute.

Meanwhile, heat the oil in a medium-sized frying pan over medium heat. Add the pepper mixture and cook, stirring, for 3 minutes. Add the spices and cook for another 2 minutes.

Add pasta to the mixture and mix well to combine. If necessary, add a little of the preserved cooking liquid. Add spices and tomatoes and cook for 5 minutes. Stir until pasta is coated with the sauce. Remove from heat.

Step 6

Transfer the mixture to a glass baking dish and spread it evenly over the bottom.  Place the dish in the oven and bake for 15 minutes. Sprinkle with cheddar and Parmesan cheese and bake until the cheese melts. Remove from the oven and sprinkle with parsley.

  • Use the pasta of your choice
  • Replace cheddar with mozzarella cheese
  • Keep leftover pasta bake in an airtight container at room temperature for up to 24 hours
