Quinoa Chickpea Salad

Quinoa Chickpea Salad Ingredients

  • 130 g quinoa
  • 350 ml water
  • 400 g chickpea, canned
  • 1 avocado, diced
  • 10 olives, chopped
  • 1 medium red bell pepper, diced
  • 1 medium cucumber, peeled and chopped
  • 100 g cherry tomatoes, halved
  • 2 medium onions, chopped

Lemon Dressing Ingredients

  • 80 ml lemon juice
  • 50 ml olive oil
  • 3 garlic cloves, minced
  • ½ tsp Himalayan salt
  • ½ tsp black pepper

Directions

Step 1

Place quinoa, water, and a pinch of Himalayan salt in a medium pot, bring to a boil, and simmer on low for 15 minutes until all the water is gone.

Step 2

Soak vegetables in baking soda solution for 10 minutes, then rinse and dry.

Step 3

Prep all the vegetables – bell pepper, cherry tomatoes, avocado, olives, cucumber, and onion.

Step 4

Make the lemon dressing by mixing lemon juice, olive oil, minced garlic, Himalayan salt, and pepper.

Step 5

Place the chickpeas, avocado, red bell pepper, olives, cucumber, tomatoes, and onions in a large bowl.  Add the quinoa and dressing and give a good toss.

Step 6

Adjust salt and lemon to your liking.

Kale Vegan Salad

Ingredients

  • 200g kale, chopped
  • 30g quinoa
  • 1 avocado, sliced
  • 1/2 onion, chopped
  • 1 tomato, chopped
  • 3 tsp olive oil
  • 3 tsp sesame oil
  • 3 tsp soy sauce
  • 3 tsp apple cider vinegar
  • 2 tsp of grated fresh ginger
  • 2 medium garlic cloves, minced
  • 3 tbsp pumpkin seeds
  • 3 tbsp sesame seeds
  • mint leaves
  • 100g tofu, cubed
  • Pinch of Himalayan salt
  • Pinch of pepper
  • chili flakes

Directions

Step 1

Place quinoa, water, and a pinch of Himalayan salt in a medium pot, bring to a boil, and simmer on low for 15 minutes until all the water is gone.

Step 2

Soak vegetables in baking soda solution for 10 minutes, then rinse and dry.

Step 3

Place kale, quinoa, tomato, onion, garlic, ginger, olive oil, and sesame oil in a salad bowl and give a good toss.

Step 4

Add apple cider vinegar, soy sauce, pumpkin seeds, sesame seeds, avocado, mint leaves, salt, chili flakes, and pepper and mix until all combined.

Step 5

Serve with cubed tofu.
